As an editor, I’ve covered a wide range of topics, but one issue that continues to surprise me is the prevalence of vitamin deficiency in Americans. Despite living in one of the wealthiest nations, many of us are undernourished. We’re well-fed, but not well-nourished.

Recent studies show that as much as 31 percent of Americans are deficient in at least one vitamin, with nearly 90 percent of us not meeting the current suggested intake of vegetables. The typical Western-style diet, high in saturated and trans fat, sugary desserts, sodium, processed meat, high-fat dairy products, and refined grains, is often associated with chronic diseases such as cardiovascular disease, type 2 diabetes, liver disease, obesity, some types of cancer, and tooth decay.

The Role of Healing Fats

In the midst of this crisis, there’s a ray of hope: healing fats. Yes, you heard it right. Fats that heal. These are not your typical fats but essential nutrients that play a crucial role in our overall health and well-being. They are integral components of cell membranes, providing structure and facilitating cell function. Moreover, certain fats, like omega-3 fatty acids, have anti-inflammatory properties and play a crucial role in the body’s immune response.

The Power of Nutrient-Dense Foods

Preventing nutrient deficiencies involves eating a nutrient-dense, whole-foods diet. Food sources rich in nutrients include dairy products, leafy green vegetables, fruits, eggs, fish, meat, poultry, beans, legumes, and fortified foods.

The Call to Action

As we grapple with this silent epidemic, it’s essential to remember that our health is our wealth. We need to prioritize our nutrition and make conscious choices about what we put into our bodies.
